  11. 80 g de chocolat au lait
  12. 200g praliné
  13. Mousse chocolat noir ↙️ou lait ici elle est au lait (pistoles valrhona)
  14. 50cl de lait tiède
  15. 200g de chocolat noir ou lait
  16. 250 g de crème fraîche
  17. 2 feuilles de gélatine
  18. Décor

Instructions to make to make Un Royal pour noël

  1. Pour la daquoise préchauffez le four à 210°
  2. Montez les blancs en neige en incorporant le sucre roux petit à petit faites bien monter et serrer avec le sucre comme une meringue, mélangez ensemble le sucre glace, la farine et la poudre d'amandes et incorporez délicatement
  3. Dessinez votre moule sur votre feuille sulfurisée et avec une poche dressez votre fond, mettez au four à 210° pendant 12 mn
  4. Croustillant praliné : faire fondre au bain marie votre chocolat, réduire les gavottes en miettes mettre le chocolat fondu avec le praliné mélangez bien et incorporez les gavottes..
  5. Votre biscuit refroidi, placez votre cadre dessus ( le tout sur papier sulfurisé et parez les bords, glissez du papier sulfurisé et déposez le croustillant praliné uniformément
  6. Pour la mousse : faire fondre 2 feuilles de gélatine dans l'eau froide, faire fondre le chocolat, faites tiédir le lait et mettez la gélatine, remuez bien et mettez le lait / gélatine dans le chocolat, laissez refroidir (35°)
  7. Montez la crème en chantilly j'ai mis 1 cas de sucre et une fois montée ajoutez le chocolat refroidi
  8. Déposez la mousse sur le croustillant et déposez dessus un décors pour un effet bois (décor récupéré dans un moule à bûche) mettez au congélateur
  9. Ayant fait ce gâteau très rapidement les bords n'étaient pas très jolis, j'ai mis un ruban pour cacher la misère 😅 j'ai mis quelques petits flocons de noix de coco et un petit décor noël pour info il était très bon !
