- 60 g sucre
- 40 g maïzena
- 100 g crème liquide entière

- Sablé breton : Fouetter les jaunes et le sucre au fouet. Ajouter le beurre mou et mélanger. Ajouter la farine, sel, levure mélanger et former une boule. La déposer dans un film alimentaire et réserver au frigo minimum 3h. Étaler la pâte entre 2 feuilles de papier cuisson sur 4mn d'épais. Depouper avec un cercle de 22cm et cuire à four chaud à 180 degrés 20mn. Laisser refroidir.
- Crème diplomate : Réaliser un crème pâtissière, faire bouillir le lait avec la gousse de vanille. Mélanger le sucre, la maïzena et les œufs. Verser le lait sur le mélange précédent, bien mélanger et remettre dans la casserole et cuire la crème jusqu'à épaississement. Réservez dans un plat, filmer au contact et laissez refroidir au frigo. Monter la crème liquide en chantilly et mélanger à la crème pâtissière refroidie que vous aurez préalablement fouettée pour la lisser. La crème est prête.
- Montage : Déposer le sablé breton sur un plat de service, pocher la crème dessus et repartir les fraises à votre convenance. Bonne dégustation !
