  1. La veille, Préparer la mousse à la vanille. Tremper la gélatine dans de l’eau froide. Verser presque toute la crème très froide dans un saladier (garder 2 càs pour la gélatine) ou le bol d’un robot avec le sucre. Commencer à fouetter d’abord à petite vitesse puis moyenne jusqu’à ce que la crème devienne bien mousseuse presque ferme (il faudra 5 à 10 min)
  2. Chauffer le reste de crème, hors du feu incorporer la gélatine égouttée et bien pressée. L’ajouter à la chantilly en mélangeant délicatement de manière homogène
  3. Verser la chantilly dans un moule en silicone en insérerant les griottes et bloquer au congélateur toute une nuit
  4. Pour le brownie Préchauffer le four à 170°. Faire fondre le chocolat à tout petit feu dans une casserole en remuant avec une spatule en bois. Quand il est bien fondu ajouter le beurre coupé en petits morceaux hors du feu. Mélanger et ajouter les oeufs un à un. Ajouter alors la farine en pluie, mélanger puis ajouté les griottes. Verser la préparation dans un moule de la taille du moule en silicone préalablement utilisé
  5. Enfourner pour 25 minutes, quand la pointe du couteau ressort sèche, stopper la cuisson. Laisser refroidir et démouler
  6. Le lendemain, démouler la chantilly et la déposer congelée sur le biscuit
  7. On termine par la gelée. Rehydrater la gélatine dans un bol d'eau froide. Dans une casserole, faire chauffer le sirop de cerise, laisser refroidir à température ambiante et s'en servir pour la décoration finale du gâteau. Bloquer au congélateur
  8. Décorer selon vos goûts avec biscuits, chocilat fondu etc
  9. 15 minutes avant de déguster, sortir le gâteau du congélateur
  10. Bonne dégustation 😋
