- Enrobage lait amandes Torréfier les amandes hachées au four jusqu’à obtenir la couleur désirée (environ 10 min à 170°). Faire fondre le chocolat au bain-marie. Ajouter ensuite l’huile et les amandes torréfiées. Réserver à température ambiante.
- Finition Poser le cake sur une grille. Réchauffer éventuellement le glaçage rocher. Le verser régulièrement sur le marbré. Quand le glaçage a figé, poser le cake sur le rectangle de feuilletine.
