- Sabler le beurre : couper en petits dés le beurre puis le mélanger avec la farine et le sel jusqu'à l'obtention d'une poudre sableuse. Ajouter le sucre glace. Ajouter l'eau et le jaune œuf, puis assembler la pâte en boule. Fraiser la pâte : écraser avec la paume de la main les bords de la pâte sur le plan de travail afin de la rendre homogène. Répéter 4 à 5 fois l'opération. Laisser reposer au frigo au moins 30 min.
- Étaler la pâte à la dimension et foncer la dans le cercle bien bomber de graisse pour facilité le démoulage. Passer ensuite le rouleau par dessus pour couper l’excédent de pâte. Remettre au frigo. Préchauffer le four à 180°C
- Verser le lait dans une casserole, porter à ébullition, ajouter la gousse de vanille fendue. Laisser infuser 10 min hors du feu. Casser les œufs dans un saladier, ajouter le sucre, et la maïzena. verser 1/3 du lait, remuez encore puis verser le reste du lait. Remettre dans la casserole sur le feu, remuer constamment jusqu'à épaississement. Mélanger la crème de temps en temps pour refroidir un peu.
- Étaler votre crème sur la pâte. Enfournez environ 1h à 180°C. Laissez tiédir avant de démouler. Le mieux est de laisser la tarte refroidir complètement une nuit au frigo. Voila bonne dégustation💋.
