  1. BISCUIT CUILLÈRE Préchauffer le four à 180° en mode chaleur tournante. Casser les oeufs, monter les blancs en neige ferme avec la pincée de sel. Ajouter le sucre quand ils sont montés et fouetter encore quelques secondes. Ajouter dans les blancs en neige les jaunes d’oeufs. Mélanger délicatement au fouet.
  2. Ajouter la farine tamisée, mélanger délicatement à la maryse pour ne pas faire retomber le blancs. Répartir la préparation sur votre tapis en silicone, lisser avec une spatule pour avoir une hauteur homogène. Enfourner à 180° pour 12 minutes de cuisson. Le biscuit doit être légèrement gonflé et blond. Démouler sur le plan de travail, laisser refroidir 5 minutes.
  3. Découper trois rectangles dans le biscuit de la longueur du moule. Le premier doit être de la largeur de la base du moule (le plus grand), le deuxième 1,5 cm de moins que le premier et le dernier 2 cm de moins que le 2ème.
  4. MOUSSE TIRAMISU Réhydrater la gélatine dans un peu d’eau. A l’aide d’un batteur électrique, fouetter les jaunes d’oeufs et le sucre glace jusqu’à ce que le mélange blanchisse.
  5. Faire fondre la gélatine dans 3 cuillères à soupe d’eau bouillante puis ajouter le mélange dans le saladier sur les oeufs blanchis au sucre. Mélanger rapidement pour répartir la gélatine. Ajouter le mascarpone, mélanger au fouet. Monter la crème en chantilly, l’ajouter au mélange précédent délicatement.
  6. Répartir une couche de crème, reposer une bande de biscuit imbibé (la moyenne) et remettre de la crème. Imbiber la bande la plus grande de biscuit de café pour finir la bûche. Réserver 3 heures au réfrigérateur puis congeler au moins 8 heures pour faciliter le démoulage de la bûche.
  7. MONTAGE A l’aide d’une spatule, répartir un peu de crème tiramisu dans le fond du moule. A l’aide d’un pinceau imbiber la plus petite bande de biscuit de café mélangé au Marsala (facultatif). Déposer dans le moule.
  8. Quand elle est bien froide, la démouler délicatement sur le plat de service. Saupoudrer de chocolat et laisser revenir à température pendant 8 heures au réfrigérateur.
