  6. Le montage se fait a l'envers dans un moule souple. Commencer par mettre de la crème au fond du moule, puis le biscuit dacquoise. Étaler dessus le croustillant chocolat. Poser la gelée de poire encore congelée. Recouvrir de crème. Puis poser un disque de gâteau yaourt. Filmer et mettre au congélateur quelques heures ou une nuit. Ce gâteau peut se faire quelques jours à l'avance.
  7. La veille de la dégustation, le sortir du congélateur. Le démouler. Le poser sur un plat côté gâteau yaourt et le laisser décongeler. Avant de servir le saupoudrer de chocolat noir en poudre
