- 15 g beurre
- 1 gousse vanille
- 120 g beurre

- ✔ pate sablé : tt d'abord dans un saladier on commence par tamisé la farine le sucre glace et la poudre d'amende ensuite on ajoute le beurre coupé en p'tit des légèrement ramolli on mélange au bout des doigts sant préchauffé le beurre pr obtenir une texture proche du sable (c est le sablage)
- On creuse un puis dans la préparation précédente on verce loeuf et le sel on mélange progressivement a l'aide de la marise jusqu' obtention d'une boule qui se détache des parois d saladier on forme une boule on la couvre du filme alimentaire laissé la reposé 1h min au frigo après repos on étale la pate et on la forme 😍 on la laisse reposé encore 30 min au frigo apres direction au four préchauffé a 200 ° (10 min de cuisson)
- ✔Genoise : dans le bol du robot on met les oeufs le sucre et le sachet du sucre vanillé on va fouetté le tt a l'aide du batteur pendant une 10 ene de minute le mélange doit blanchir triplé de volume et bien ferme.. on ajoute la farine a 2 fois en tamissant on mélange apres chaque ajout vec une marise incorporé bien la farine et évité de faire tombé le mélange... on verce le mélange dans un moule a génoise beurré et fariné direction au four préchauffé a 170 ° pendant 25 min
- A la sortie du four on laisse la genoisse se refroidir apres on la coupe en 3 disques a l'aide d'un couteau ci
- ❌ sirop d'imbibage : dans une cassrole on verse le sucre L eau et on met le tt a ébullition le sucre doit être tt dessous on retire la caserole du feu et on ajoute fleur d'Orangé et le laisse refroidir
- ❌crème mousseline: dans une casserole on met le lait la gousse de vanille et dans un saladier les jaune d'oeufs et le sucre on mélange a l'aide d'un fouet jsq blanchissement du melange ensuite on ajoute la maïzena et la farine on fouet a nouveau jsq obtention d'un mélange homogène on ajoute notre mélange lait vanille bien chaud a deux fois en fouettant (retiré la gousse de vanille)quand le mélange est bien homogène on le verse dans la casserole et on met le tt a ébullition sur un feu moyen
- Jusqu'à épaississement de la crème on retire la casserole du feu et on ajoute les 15 g de beurre la crème pâtissière est prête on la verse dans un saladier on la couvre d papier filme et on la laisse refroidir
- Après refroidissement de la crème on enlève le papier filme on la fouette a l'aide d'un batteur on ajoute les 120 g de beurre pommade a une température ambiante a deux fois en fouettant apres chaque ajout jusqu'l'obtention d'une crème bien homogène on la réserve au frigo jusqu' au montage
- Pour la deco et le montage chacun son goût moi jai préféré pate a chocolat blanche et coloré pr la déco
