  1. 1 banana flower
  2. 3 tsp turmeric powder
  3. as per taste Salt
  4. as needed Some fresh coconut chopped
  5. 3-4 small potato peel and cut into halves
  6. 1/4 cup soaked black gram/chana
  7. 2 onion
  8. 6-8 garlic cloves
  9. 1 inch ginger
  10. 2 Green chilli
  11. 1/3 cup tomato puree (grind tomato till smooth)
  12. 5 tbsp mustard oil
  13. 1 tsp Cummin seeds
  14. 2 bay leaves
  15. 2 cloves
  16. stick Small cinnamon
  17. 1 green cardamom
  18. 1 black cardamom
  19. 1 tbsp coriander powder
  20. 1 tsp Cummin powder
  21. 1/2 tsp garam masala powder
  22. 1 tsp kasmiri mirch powder
  23. 1/4 tsp black pepper powder
  24. 1 tbsp ghee
  25. as required Some fresh coriander leaves

Instructions to make to make Banana Flower Curry or Mochar Ghanto

  1. Firstly, remove the reddish leaves, there will be yellow tipped florets that we will be cooking with. The florets needs to be cleaned though.
    Remove each floret and pull the stick like pistil with a bulgy top to the right. This is very bitter and inedible, When you pull the pistil to your right, the calyx (the small, thick, light pink color petal like thing) will come out. Remove that too. As shown in 3rd picture.
  2. Take a bowl and add water, 2tsp turmeric powder and 2tspsalt to it. Finely Chop the banana blossom. Add the chopped blossoms immediately to the turmeric, salt and water mixture. You can keep this in the fridge and use it the next day. Drain the water completely and wash once to remove the extra salt and turmeric before using.
  3. Further, in a pressure cooker add banana blossom, black gram and 3/4cup water to it. Cook till 3 whistles. Once it comes to room temperature, drain extra water completely.
  4. Meanwhile in a grinding jar add half of one onion, ginger-garlic, chilli and black cardamom. Grind till smooth. Keep it aside.
    Heat 1tbsp oil in a deep bottomed kadai and add chopped coconut, stir and cook till golden on low flame. Keep it aside.
  5. In same kadhai add remaining oil, splattered bay leaves, Cummin, green cardamom, clove and cinnamon. Add in potato pieces, cover and cook for 2-3 minutes. Keep the flame on medium. Further, add remaining onion slices. Stir and cook till onion change its colour and becomes translucent.
  6. Now, add the onion-ginger-garlic paste that we prepared earlier. Cook until raw smells goes. Further add dry masala... turmeric powder, coriander powder, Cummin powder, pepper powder kasmiri mirch powder and garam masala mix all together and cook for a minute. Further add tomato puree cook for 2-3 minutes.
  7. Now add boiled banana blossom black gram and fried coconut mix all together well. Stir and simmer for 12 -15 minutes or until it cooked completely.
  8. Add ghee, mix well and cook for another 2 minutes. Turn off flame. Add coriander leaves.
    Banana Flower Curry or Mochar Ghanto is ready. Serve hot with rice or roti. Enjoy
