  9. 1/2 Cup Onion Paste
  10. 1 tsp Red Chilli Powder
  11. 1 tsp Turmeric Powder
  12. 2 Onions: Finely Chopped
  13. 2 Tomatoes: Finely Chopped
  14. 3-4 Fresh Green Chillies
  15. Tempering Spices:
  16. 2 Bay Leaves
  17. 1 tsp Cumin Seeds
  18. 5-6 Cloves
  19. 5-6 Green Cardamoms
  20. 2 inch Cinnamon Stick: Beoken into pieces
  21. 7-8 Black Peppercorns: Whole
  22. 1 Star Anise
  23. 1 Black Cardamom
  24. 1 tsp Kashmiri Red Chilli Powder
  25. 1 tbsp Bhuna Masala Powder
  26. 1 tsp Garam Masala Powder: Homemade
  27. 2-3 tbsps Cooking Oil: Any Veg. Oil or Mustard Oil

  29. 1 tsp Kasuri Methi

Steps to make to make Jeera/Cumins Mutton/Gosht

  1. First up: Heat up a frying pan & dry roast the raw cumin seeds until nicely golden brown & crunchy- Cool down completely before pounding it roughly…Similarly, dry roast the whole coriander seeds & the black peppercorns, allow them to cool down too, completely before roughly Crushing
  2. Roughly ground it into a mortal-pestle (We All Indians have that mostly, in our pantries), reason: If we grind it in the blender jar- it’d be finely ground what we don’t want for this specific dish hence the former age-old gadget is always & highly recommended

  6. Now, heat up a heavy bottomed pan over the medium-high flame & pour in the admixture of the oil & ghee (keeping some of the ghee reserved, for its later use), add in the tempering spices to it & allow it to crackle & get aromatic
  7. Drop in the chopped onions & sauté until translucent & in goes the 2G Paste at this point & continue sautéing nicely golden brown & their raw smell goes off & the oil surfaces upto the pan- Drop in the Rest of the dry roasted & half-ground Masalas to it- Give it all a really good mix
  8. Continue sautéing until the oil surfaces upto the pan again & that’s the indicator to add into our marinated mutton pieces & keep on stirring continuously until nicely combined and well incorporated- Reduce the flame to the medium at this point and keep on stirring it occasionally while let it cook halfway through

    Cover it & cook for at least 35-45 mins time while checking on it closely so as not to stick to the bottom of the pan & get burnt…Keep on stirring occasionally in between all through while it’s still cooking with the lid on
  10. Now, since the marinated mutton automatically & organically releases enough of its juices- We need to dry that out completely to get the oil afloat once more- This is the good time to add in rest all other ingredients & spices aforesaid & mix everything nicely together until they’re all, well combined & incorporated
